For the vegetables:
Put the lamb, onion, garlic, coriander (cilantro) smen, salt, oil and Dar Choumicha® Spices for Tajines in a saucepan.
Add ½ cup water and simmer over a low heat for 10 minutes, stirring regularly.
Add water to the level of the meat and simmer, covered, over a low heat until the meat is tender.
Halfway through the cooking, add the artichokes and the second bunch of coriander (cilantro).
When the artichokes are half cooked, add the juice of half the lemon and the other half lemon cut into rounds.
Keep cooking over a low heat until the artichokes are cooked and the sauce reduced.
Note: For a change, replace the lamb with free range chicken.
