Cut the chicken into 4 quarters.
In a bowl, mix the Dar CHOUMICHA® M'QALLI spice mix with the garlic, lemon juice, and fermented butter (or S’men).
Marinate the chicken in this preparation for 30 minutes.
In a large pot on low heat, brown the chopped onion in the two oils for 5 minutes.
Add in the chicken with its marinate, and brown it on all sides.
Wet the chicken with a bit of water and let it cook for 15 minutes.
Pit the olives and detail the candied lemon peel into fine strips.
Add in the olives and candied lemon peels with the chicken, cover, and let simmer until the chicken is cooked and the sauce
In a serving dish, set the chicken quarters, garnish them with the olives and lemon peels, and coat in sauce.
